Recipe Ingredients
- 140g cornmeal
- 70g plain flour
- 3 tsp baking powder
- 1 onion
- 2 jalepno chillis
- 4 tbsp vegatable oil
- 125g canned creamed sweetcorn
- 225ml soured cream
- 2 eggs
Recipe Instructions
1. Finely chop the onion and chillis.
2. In a large bowl mix in the cornmeal, flour, baking powder onions and chillis.
3. Heat the oil in a large oven proof pan, ensuring oil coats the base and sides
4. Make a well in the centre of the flour mix and add in the eggs, corn, soured cream and hot oil.
5. Stir until combined and pour into the hot pan.
6. Bake for 35-40 minutes.
7. Cut into wedges and serve warm.
