Warm potato and tuna salad

Recipe Ingredients
- 650g small new potatoes
- 2 tbsp pesto
- 4 tbsp olive oil
- 8 cherry tomatoes
- 175g can tuna
- 225g green beans
- Couple of handfuls spinach
Recipe Instructions
1. Simmer potatoes for 8 minutes
2. Mix pesto and olive oil. Halve the tomatoes and drain and flake the tuna.
3. Halve the beans and add to the potatoes and simmer for a further 3 minutes
4. Drain potatoes and beans and tip into a salad bowl Add the spinach and mix so it wilts with the heat of the vegetables. Add the tomato and tuna, drizzle on the pesto and toss together.
