Blueberry, banana and raisin muffin

Recipe Ingredients
- 240g Blueberries
- 4 ripe bananas
- 120g Oats
- 120g almonds
- 120g ground flaxseed
- 120g raisins
- 175ml apple juice
- 100ml water
- 8 tblsp maple syrup
- 2 tsp cinnamon
Recipe Instructions
Pre-heat the oven to 180C, gas mark 4
Blend almonds, oats and ground flaxseed in a food processor for a few minutes until a smooth flour forms.
Slice the banana into the mix and pour in the apple juice, water, cinnamon, maple syrup and blend again until smooth.
Using a spatula scrape all the mixture into a large mixing bowl. Stir in the blueberries and raisins. Mix well
Place mixture into non-stick muffin tray, bake for 30-40 minutes – until you can stick a fork until the muffin and pull it out clean.
Makes 15 muffins
