Recipe Ingredients
- 250g ready made shortcrust pastry
- 3 tbsp olive oil
- 450g onions, thinly sliced
- 2 garlic cloves, crushed
- 2 x 425g cans chopped tomatoes, drained
- 1 tsp dried oregano
- 25g thinly sliced pepperoni
- 85g mature cheddar, grated
- 50g can anchovy fillets on oil, drained and halved lengthways
- 12 black olives
- salad, to serve
Recipe Instructions
- Roll out the pastry and line a 23cm flan tin. Chill while you make the filling. Heat the oil in a pan and fry the onions and garlic for 15 minutes until soft. Cool for 10 minutes, then spread over the pastry.
- Preheat the oven to 220 degrees celcius (Gas Mark 7). Spread the tomatoes over the onions, sprinkle with oregano and top with the pepperoni. Sprnkle over the cheese and arrange toeh anchovies and olives on top.
- Bake for 25-30 minutes until the pastry is cooked. Serve hot or cold with a salad.
