Blueberry Muffins

Recipe Ingredients

  • 250g self raising flour
  • 1 tsp baking powder
  • 50g soft margarine
  • 75g caster sugar
  • 175g fresh blueberries
  • 1 grated lemon rind
  • 2 eggs
  • 250ml milk

Recipe Instructions

1. Pre heat the oven to 200C/Gas 6.
2. Place 12 muffin paper cases into muffin tin.
3. Measure the flour and baking powder into a large bowl.
4. Rub in the margarine with fingertips until the mixture resembles fine breadcrumbs.
5. Stir in the sugar, blueberries and the grated lemon rind.
6. Mix together the eggs and milk, then pour the mixture all in one go into the dry ingredients and mix to blend.
7. Spoon the mixture into the prepared paper cases, filling almost to the top.
8. Bake in the pre heated oven for about 20-25 minutes until well risen, golden and firm to touch.
9. Leave the muffins to cool for a few minutes in the tray.
10. Lift the paper cases out of the tin and leave to cool on a wire rack.
