Turkey kebabs

Recipe Ingredients
- 1 tsp green peppercorns
- 50ml medium dry white wine
- 120ml pineapple juice
- 1 tsp hot paprika
- 500g boneless turkey breasts
- 4 slices fresh pineapple
- 1 (medium) red pepper
- 1 (medium) green pepper
- 8 (medium) onions
- 2 tbsp vegetable oil
Recipe Instructions
- Crush the green peppercorns with a pestle in a mortar. Transfer them to a bowl and mix in the white wine, pineapple juice and the paprika.
- Cut the turkey breasts into bitesize pieces. Put the turkey in a dish, pour over the marinade and mix thoroughly. Cover and set aside in the refrigerator to marinate for about 3 hours.
- Cut the pineapple slices into bitesize pieces. Seed the red and green peppers and cut into bitesize pieces. Cut the onions in half. All the pieces should be about the same size as the turkey pieces.
- Remove the turkey from the marinade and drain. Reserve the marinade. Thread the turkey, pinapple, peppers and onions in turn onto 4 skewers. Mix together the remaining marinade and the vegetable oil. Grill the kebabs on the barbecue for 20-25 minutes, turning and brushing with the marinade frquently.
