Chicken and red pepper bake

Recipe Ingredients
- 4 boneless skinless chicken breasts
- 1 small red pepper
- 2 garlic cloves
- Large handful fresh parsley
- 2 tblsp olive oil
Recipe Instructions
1. Preheat oven to 200C/Gas mark 6.
2. Put the chciken breasts into shallow oven dish. Season.
3. Roughly chop the red pepper and finely chop the garlic. Put in a food processor with the parsley a few times until coarsley chopped. Stir in the oil and seasn generously. Spread the crust over the top of the chicken.
4. Spoon 2 tblsp of water into the base of the dish and roast, uncovered for 25 mins
