Ham and pepper tart

Recipe Ingredients

  • 250g bought shortcrust pastry
  • 1 finely chopped onion
  • 1 crushed garlic clove
  • 1 red pepper
  • 1 tblsp olive oil
  • 1 230g tin chopped tomatoe
  • 100g wafer thin ham
  • Handful black olives
  • 3 eggs
  • 3 tblsp milk

Recipe Instructions

1. Line a 23cm loose-bottomed flat tin with the pastry. Bake blind for 15 minutes in a pre-heated oven at 200C/gas mark 6 using paper and ceramic beans. Remove paper and beans and cook for a further 5 minutes.

2. Fry the onion, garlic and red pepper in the oil for 4 minutes until softened. Add the drained tin of tomatoes and mix in with the chopped ham and put into the pastry case. Top with olives.

3. Beat the eggs and milk together and season. Pour into the case and bake for 25-30 minutes.

Perfect hot or cold with a salad.
