Recipe Ingredients

  • 225g self raising flour
  • 50g butter
  • 25g caster sugar
  • 2 teaspoons baking powder
  • 1 egg
  • milk

Recipe Instructions

1. Pre-heat oven to 220C/425F/Gas 7.
2. Lightly grease 2 baking trays.
3. Place the flour and baking powder into a bowl, then add the butter and rub in with the fingertips until it looks like fine breadcrumbs.
4. Stir in the sugar.
5. Break the egg into a measuring jug, then make up to 150ml with milk.
6. Stir this liquid into the flour (the dough should not be sticky so you may not need all the liquid).
7. Turn out on to a lightly floured surface, knead lightly and then roll out to a thickness of 1cm.
8. Using a 5cm cutter, cut into circles and place them on the prepared baking trays.
9. Brush the tops with a little milk (or any liquid you had left).
10. Bake for about 10 minutes or until they are pale golden brown.
11. Lift on to a wire rack to cool.
