Recipe Ingredients
- 4 egg whites
- 225g caster sugar
- 300ml whipping cream, whipped
Recipe Instructions
1. Pre heat the oven to 130/Gas Half.
2. Line 2 baking trays with non-stick baking paper.
3. Place the egg whites in a large bowl and wish on high speed with an electric whisk until stiff but not dry.
4. Add the sugar, a teaspoon at a time, whisking well after each addition, until all the sugar has been added.
5. Divide the mixture into 24 rounds on the baking trays.
6. Bake in the pre heated oven for about an hour to an hour and a half, or until the meringues are able to be lifted easily from the paper without sticking.
7. Turn off the oven, leave the door ajar and leave the meringues until cold.
8. Fill with whipped cream and sandwich together to make 12 double meringues.
